Rice pig refers to pork infected with cysticerci of Taenia solium. It is a disease caused by the larvae of the hook tapeworm parasitic in the human body. It is commonly known as "rice pig". Rice noodle pigs are white translucent vesicles that are mostly found between muscle fibers. They are about 8 to 10 mm long and about 5 mm in short diameter. They are about the size of rice grains to soybeans.
The cyst contains fluid, and there is a milky white scolex on the inside of the cyst wall. It is more concentrated in lean meat, especially in leg and buttock muscles, and is generally easier to identify. If you find rice-like white spots on the lean meat at the new incision of the pork, it is "rice vermicelli pork".
